Quick post just to add the recipe for this roasted cherry salad I posted to my Instagram. I saw this in a newspaper article a while back and decided to veganise and give it a go. It was really delicious, light and perfect for summer. The cherries work so well with the crisp lettuce and tangy yoghurt dressing and the bread croutons help mop up all their juices. So give it a try before cherry season is over!
Roasted cherry salad with a yoghurt dressing – serves 2 to 4
200g cherries, pitted and halved
A few sprigs thyme
zest of a lemon
2 tbsp sherry vinegar
Salt and black pepper
4 slices of sour dough bread
little gem or other crunchy salad leaves
A handful of pecans to serve
For the dressing:
1 dl greek style oat yoghurt
1 tsp maple syrup
2 tbsp extra-virgin olive oil
a good squeeze of lemon juice
Heat the oven to 200 C. Lay the cherries on a lined baking tray, scatter with the thyme and grate over the lemon zest. Drizzle with the vinegar and oil, and season with salt and pepper and roast for 15 minutes. Set to one side to cool.
Tear the sour dough into chunks and lay out on another lined baking tray. Season well. and drizzle with olive oil. Roast in the oven for around 10 minutes or until they turn golden. Set to one side to cool.
To make the dressing, whisk all the ingredients in a small bowl. Season, taste and add an extra squeeze of lemon if necessary. The dressing should have a slight tang.
Scatter the salad leaves on a plate. Add the bread croutons and dot over the roasted cherries. Finish with the pecans and a generous drizzle of the dressing.
