Yoghurt Bowl with Cherry Compote and Cacao Rawnola

Before the season is over, I have to give you one last cherry recipe.  I eat so much yoghurt, so I am always looking for a different way to serve it.   I have included a little sugar in my recipe, but to be honest sometimes I don’t add any if the cherries are suitably sweet.  I am also gradually moving towards rawnola, rather than regular granola.  Granola and, particularly shop bought granola, are often high in added sugar and oil.  By using dates, there is no need to add oil and although they are relatively high in natural sugars, I still think it is preferable to adding refined white sugar.  The rawnola keeps well in an airtight container for up to a week.

For the cherry compote:

400 g cherries, pitted

1 – 2 tbsp sugar (optional)

1 vanilla pod

 

For the Rawnola:

8 medjool dates, pitted

1.5 dl/ 150 ml gluten free oats

2 tbsp raw cacao

1 tbsp goji berries

2 tbsp dried mulberries

2 tsp poppy seeds

2 tbsp sliced almonds

1 tbsp pumpkin seeds

1 tbsp sunflower seeds

1 tbsp linseeds

 

plant based yogurt to serve

To make the compote add the cherries to a small pan with the sugar, (if using), the seeds from the vanilla pod and a splash of water.  Heat to a light simmer and continue to cook until the sugar has melted and the fruit has softened, but retains some bite.  Pour into a sterilised jar and allow to cool.

Meanwhile make the rawnola.  Add the dates, oats and raw cacao to a food processor and pulse until the mixture begins to form into large, granola size crumbs.  If you dates are a little dry, I would recommend either soaking them for 10 minutes in hot water before adding to the food processor, or add a few drops of water add you pulse the oats and dates together.

Finish of the rawnola, by mixing through all the remaining ingredients.

To serve, spoon yogurt into your bowls and top with a little of the compote and a good sprinkling of rawnola
