New blog post - Middle Eastern style roasted Brussel sprouts (paahdetut ruusukaalit Lähi-idän tyyliin). Christmas is nearly here so I can’t resist another Brussel sprout recipe. Forget mushy grey boiled versions and think caramelised sprouts roasted with Middle Eastern spices on a bed of tahini, lime and sumac yoghurt and finished with a sprinkle of fresh herbs and nuts. Coconut chia pudding with @nushfoods strawberry almond yog in my favourite @leenakouhia bowl! Perfect start to the day
New blog post - Spiced parsnip cake (mausteinen palsternakka kakku). This is a great alternative to carrot cake and its festive flavours make it a good replacement for traditional Christmas cake! Parsnips create a similar moist textured cake, like carrots, but add a delicious fragrance. If you want to try it yourself, click the link in my bio or visit my blog
New blog post - butternut squash and harissa Christmas pastries (suolainen joulutorttu (harissalla maustettu paahdettu myskikurpitsa, pekaanipähkinä ja sieni). This is a savoury version of the Finnish sweet plum filler Christmas treat (apologies to any Finns who think this is Christmas sacrilege 😊). Delicious pastry filled with harissa roasted pumpkin, pecan nuts and mushrooms. Served with a harissa yoghurt sauce. Perfect for a Christmas party or a festive starter. Another shot of my oven baked berry porridge and happy Independence Day to all my Finnish friends! (I was looking for a blue and white picture for you, but the best I can do is oat milk and blueberries 😂). I still can’t believe I will have been here for 10 years next summer and it is definitely the best decision I ever took. So thank you finland for making me so welcome 🇫🇮
New blog post! Tandoori cauliflower (tandoori kukkakaali) I have been wanting to make this for ages, but the problem always was finding a suitable thick yoghurt to coat the cauliflower. Then I discovered @oatly oatgurt Turkish and here is the result! Delicious spiced yoghurt coated tandoori cauliflower with a mint and coriander chutney. New blog post - my favourite oven baked berry porridge (uunimarjapuuro) Spring seems an eternity away and November is cold, dark and damp. Times like this I turn to a bowl of comforting creamy oven baked porridge. I love using @myllarin organic gluten free oats #notsponsored Click the link in my bio or visit my blog for the recipe I have been finely tuning for a while.
New blog post - Beetroot Wellington! As it is December next week I decided it was high time to post a Christmas recipe. This Wellington is the perfect Christmas centre piece. Tender beetroot surrounded by sage roasted butternut squash, pecans and mushrooms, all wrapped in puff pastry. I served mine with some wilted spinach and a quick herb sauce, but will go all out ok the big day. Click the link in my bio or visit my blog for the recipe
I think I eat my own body weight in yoghurt every month! I love how many plants based yoghurts are available in finland right now. This is a throwback to my favourite coconut milk yoghurt from @harvest_moon_official, when cherries were still in season. If coconut is not your thing, then check out delicious oat milk yoghurts from @mokaurameijeri or the amazing almond or cashew milk yogs from @nushfoods
Lentil lasagne topped with my homemade almond parmesan (parmesan recipe on my blog). The secret to making my white sauce taste ‘cheesey’ is nutritional yeast, white miso and a couple of spoonfuls of @clearspringuk umeboshi paste. If you haven’t heard of it, it is a Japanese salt-pickled plum paste, which gives the sauce a cheese like tang!
New blog post - raspberry and lemon Creme Brûlée (vadelma-sitruuna Creme Brûlée). This is a super easy dessert which I think you will love. Click the link in my bio or visit my blog for the recipe
I love all the new vegan products that we have here in finland. I tested @mokaurameijeri new vanilla flavour oat rahkis a few days ago. I added Some sea buckthorn, blueberries, gojis, dried rose petals and fresh mint and it was so good. The oat rahkis is thicker and creamier than regular yoghurt and worked perfectly with the sour berries. This isn’t a sponsored or gifted post, it is just a product I loved!
