I will never be a pastry chef, but these nectarine gallettes were so good. Just a batch of vegan pastry, some slice nectarines and baked until golden. Perfect with a simple scoop of vanilla icecream

Summer is finally in full swing in Helsinki!! Did you know I designed a summer poke Buddha bowl, sold exclusively at @heypokehelsinki @citycenter_helsinki ? Madras roasted cauliflower, chickpeas and butter beans, a summery salad, lime, ginger and sesame dressing and a fresh avocado mango mayo. Not only is it vegan and gluten free but you can take it away too and enjoy it in the sun!

Unlike regulate ice cream the mixture isn’t whipped, resulting in a super creamy finish. I have been wanting to make these for ages but was trying to find a vegan alternative to condensed milk. You may have seen my isobeyaki post, mochi dipped in soy sauce and wrapped in nori. Well did you know mochi are also perfect paired with sweet ingredients. Here I served @clearspringuk brown rice mochi with vanilla oat ice-cream, raspberries, cherries, chopped nuts and a drizzle of @clearspringuk rice malt syrup.
