New blog post - Coconut kefir (kookoskefir). Join the fermentation movement and try my easy overnight kefir, which has been shown to have a positive impact on digestive and gut health. It uses @livingnutritionsupplements vegan fermented living culture (available @pur_kauppa In stores or online) which come in capsule form, which I opened and mixed with coconut milk to create a delicious creamy kefir. I served mine with some fresh fruit and my buckwheat and quinoa brittle (recipe also on my blog). Which combines @clearspringuk quick cook organic buckwheat and rice malt syrup to give it a beautiful crunch and almost butterscotch flavour. I have not been paid for this post but I was gifted the living nutrition living culture by @pur_kauppa and brittle ingredients by @clearspringuk
New blog post - Coronation chickpea sandwich (‘coronation’ kikhernevoileipä). My vegan version of the British classic coronation chicken - curried mayo with raisins, toasted almonds and fresh mango. Sometimes the best things come out of a little mistake! I roasted way too much red pepper for my red pepper hummus, but only realised when it was too late. But it turned into a super tasty red pepper dip! Let me know if you are interested and I can add the recipe in the comments
New blog post - vegan Baked Alaska (jäätelökakku!) Bringing back the retro classic of cold creamy ice cream on top a slice of sponge cake and finished with caramelised meringue. Who knew aquafaba and a blow torch could make something so good. I used my favourite @3kaveria chocolate caramel nut ice cream and it was so good. New blog post - Pumpkin seed protein cake with sweet miso frosting! (Kurpitsansiemenproteiinikakku ja ‘sweetmiso’kuorrutus). This sweet/ salty cake has a rich unique flavour. @clearspring organic pumpkin seed powder is packed full of plant protein and their organic coconut cream keeps the cake moist and delicious. I added @clearspringuk sweet miso to create a salted frosting which finishes the cake off perfectly. I have not been paid for this post, I just love @clearspringuk products 😊
