Made these quick Easter nests to take with me to the in-laws. Super easy, but they taste great. Simply melt 50 g plant based butter, 2 tbsp golden syrup and 225 g dairy free chocolate over a pan of simmering water. Mix in 225 g of cornflakes and spoon into muffin cases. Add you favourite decorations and leave in the fridge to set. Hopefully they like them!

Another day, another breakfast. This time toast topped with thyme roasted tomatoes with @oatly spread, rocket, homemade vegan pesto and a pistachio crumb. How are you starting Easter?

My attempt to recreate the super talented @myblissktchn’s granola cake from her new cook book Ruokaan rakastunut. It was super easy to make and tasted soooo good. I will never come close to her styling, but had fun trying a different look to my usual pictures, what do you think?

Delicious tamari roasted tempeh bowl with a japenese twist. Shichimi togarashi roasted butternut squash, pea hummus, ume pickled beetroot, avocado, black rice, greens and a miso ginger broth and of course served with a little tamari. Are you a tempeh fan? And how do you like to serve yours?

Crispbreads definitely not boring! They also work perfectly for dessert. I created some delicious toppings as part of my vegan brunch in collaboration with @sigdalbakerisuomi. New blog post! Who said crispbreads are boring? Having been challenged by @sigdalbakerisuomi to develop some crispbread toppings, I went all out to create some pimped up toppings as part of a vegan brunch. @sigdalbakerisuomi produce the most amazing Norwegian crispbreads that are packed full of grains and seeds and not only are a great source of protein but don’t contain any nasty additives. So why not try my banoffe pie topping on gluten free oat or how about minted pea, togarashi toasted squash, Ume pickled cucumber and nori sprinkle on spelt and pumpkin seed?
