Helppo vegaanien mukibrownie
This recipe was inspired by Lotta Viitaniemi of Syötävän hyvä fame. She recently posted a recipe for an easy mug brownie, so I decided to upload my vegan version that I have been making for ages. It is perfect whenever you are in need of a quick easy indulgent treat. It has an intense dark chocolate flavour and best of all, you can reduce the cooking time and end up with a self saucing chocolate cake. What could be better than a two in one recipe!
This recipe works well in a mug around 2 dl in size. You can increase the ingredients and cooking time for a larger mug.
Easy Vegan Mug Brownie – serves 1
2 tbsp vegan butter
2 tbsp sugar or sweetener of your choice
2 tbsp cacao powder
3 tbsp plant based milk at room temperature
a few drops of vanilla extract
a pinch of salt
3 tbsp flour
Add the butter to your chosen mug and melt in your microwave (around 30 seconds at 600 W)
Stir in the sugar so it begins to melt and add the cacao powder, stirring well.
Add the milk, vanilla and salt and stir, before adding the flour and giving a final stir to fully incorporate.
Cook in the microwave for around 1.5 to 2 minutes (600W). If the centre is still a little liquid, cook for another 15 seconds or so, alternatively enjoy as a sauce!
I recommend eating from the mug as it can be a little tricky to remove. Top with cream or ice cream and fresh or frozen berries
