Vegan Baked Doughnuts

Before anyone asks, no these are not particularly healthy! but in a slight nod to better nutrition, I baked these doughnuts rather than deep frying them!  Although the result is a slightly more cakey texture, they are still delicious and moreish.  Best of all you can be super creative with your decoration.  The recipe only includes a classic glaze, but I also used matcha powder, raw cacao, coconut sugar, dried strawberry powder and sea buckthorn crumb to add some colour and variety.  What is your favourite glaze?

Vegan Baked Doughnuts

Dry ingredients:

190g  Flour

125g Sugar

2 tsp baking Powder

1/4 tsp salt

 

Wet ingredients:

180ml almond milk

1 tsp cider vinegar

1 tsp vanilla extract

2 tbsp unsweetened applesauce

1/2 dl/ 50 ml coconut oil, melted

 

100 g icing sugar for the glaze

 

Preheat the oven to 180 degrees c. and grease a doughnut baking tray

Mix all the dry ingredients in a large bowl and, in a separate bowl, whisk together the wet ingredients.

Quickly mix the wet ingredients into the dry ingredients and spoon into your doughnut tray.

Bake for around 15 minutes, or until an inserted tooth pick comes out clean.

Allow to cool completely before removing from the tin and glazing.  For a simple glaze add a few drops at a time to the icing sugar until it becomes a smooth pourable icing.  Quickly dip the one side of doughnuts into the icing and place on a wire rack to allow any excess to drip off.  This is the perfect time to sprinkle with any extra decorations, before the frosting sets.  Alternatively add a teaspoon of your favourite flavour to the icing, for example matcha powder, coconut sugar, raw cacao or wild strawberry powder.
