Is it wrong that I am already wishing for the summer weather to be over? I am not good with heat. I love coats, scarves, hats and winter boots! I know many Finns will think I am crazy, but I actually love the dark nights, inches of snow and minus twenty degree temperatures. In my campaign to survive summer, I am having to come up with as many light refreshing ideas as I can (you may have already seen my Smoothie Ice Pops, which are a life saver in these overly temperate times), so this post is a simple, light refreshing salad that works well as a starter, or as a BBQ side. If you have never tried watermelon with sumac and black pepper I would highly recommend it. I have to thank Mr D. Krulla and his cheffing ways for this revelation, the sumac’s fruity notes bring out the watermelon’s flavour and the black pepper adds a little heat. If you make this in advance I would recommend adding the cucumber at the last minute, as the salt tends to draw out the water and make it very wet.

Watermelon, Cucumber and Mint salad – serves 4 – 6
1 smallish chilled watermelon, skin removed
1 pomegranate, seeds removed
a small handful of fresh mint, chopped
fresh coarsely ground black pepper and salt
Slice the watermelon and cucumber into thin slices.
Arrange on your serving plate/s and sprinkle with a little sumac, a small amount of salt and some coarsely ground black pepper.
Finally decorate with the pomegranate seeds and fresh mint. Serve immediately.
