‘Superfood’ mustariisisalaatti ja soy-cashewkastike
Berlin has so many great places to eat, but one of my favourites was Superfoods and Organic Liquids. They had an amazing range of healthy fresh options, but the highlight was their salad range. This is my version of their energising salad. It is a mixture of black rice, fresh vegetables, avocado, toasted seeds and a soy cashew dressing. I could literally eat this every day and somehow it makes me feel like I am eating super healthily! If you cook your black rice in advance, the salad can be made up in no time. Make sure to keep any leftover rice and you can use it in my Coconut and Banana Black Rice Pudding.
Black Rice Super Salad with Soy Cashew Dressing – serves 2
100 g cooked organic black rice (I use Makrobios Organic Black Rice)
1 courgette, spiralized
1 large carrot, peeled and spiralized
1 medium beetroot, peeled and spiralized
1 large ripe avocado, peeled and sliced
10 ripe cherry tomatoes, halved
5 – 6 broccoli florets, grated – I used my mix food processor)
150 g mixed salad leaves
a handful of toasted seeds
For the dressing:
2 tbsp cashew butter
2 tbsp soy sauce ( I like to use ClearSpring’s Organic Soy or Tamari Soy)
2 tsp fresh grated ginger
juice of a lime
2 tsp coconut sugar
1 tbsp sesame oil (again I love Clearspring’s Organic sesame oil)
Simply pile up all the salad ingredients in two large bowls. I separated the ingredients for the photograph so it was easier to see, but I prefer everything in tasty layers. Finally sprinkle with the toasted seeds
For the dressing whisk all the ingredients together and add a little water to thin it down. You may need to add little extra sugar if your lime is particularly juicy/ sour.
Pour generous amounts of the dressing over the salad and enjoy!
