Vanilla Cookies with a Gummy Bear Jelly Centre

I had to try one more kid friendly recipe with the vegan treats Veggie Peggy sent to me.  I knew it was possible to melt down gummy bears, but wasn’t sure how these additive and gelatine free ones would work.  But I am pleased to say they worked perfectly.  These cookies are so moreish; A crisp vanilla scented biscuit with a delicious fruit jelly centre.  They are also incredibly easy to make and you can easily get the kids involved.

I have posted these biscuits on my Instagram before, but without the jelly addition.  They work just as well iced.  I simply used natural fruit and vegetable powders to get the different colour icing  and decorated them with dried flowers, fruits and nuts.

So why not give them a go and get a little creative!

Vanilla Cookies with a Gummy Bear Jelly Centre – makes 12 cookies

65 g vegan margarine

65 g white sugar

1/2 tsp vanilla extract

130 g flour

1/2 tsp baking powder

Veggie Peggy vegan gummy bears

Cream the butter and sugar until light and fluffy.  Add the vanilla and beat for a few minutes more.

Add the flour and baking powder and mix until a coarse crumb like texture is formed.  Add a few drops of water until the mixture comes together to form a dough. Roll into a sausage shape, wrap in cling film and chill for at least 30 mins.

Preheat the oven to 180 degrees c. and line a baking tray.

Remove the cling film and slice discs of cookie dough with a very sharp knife.  Use your thumb, spoon or I used a tablespoon measure, to create a indentation in the centre of each cookie.

Space the cookies well apart on the baking tray and bake for 8 mins.  Remove the tray from the oven and add a gummy bear to the centre of your indentation.  If the biscuit has risen up too much, lightly press the indentation down again with the back of a spoon.

Bake for a further 8 mins until the cookies are golden and crisp and the gummy bear has melted down.

Leave to cool on a wire cooling rack.
