I have had a busy week, so just time for a quick recipe for these super simple vegan granola bars. They are great to take on the move, are quick and easy to make and are naturally sweet and squidgy. I have tried out lots of different toppings, but I particularly like the flaked salt and the crystallised ginger. Once made the bars are good for a week, stored in an airtight container in the fridge.
Vegan Granola Bars
260 g soft dates
250 g Almond butter (you could use any other nut butter you prefer)
90 g oats (I used Myllärin Gluten free oats to make the bars vegan and gluten free)
75 g mixed seeds and chopped nuts
vegan chocolate to decorate
simply place the dates, almond butter and oats in a blender and pulse until the mixture comes together and forms a soft dough. Add the seeds and nuts and pulse a few times, to roughly chop. Pour into a lined loaf tin and place in the fridge to chill and set.
Once the granola bar mix feels firm, remove carefully from the tin and cut into the desired bar shape. The bars are fairly soft, if you prefer a firmer bar add a little more oats to the blender before pulsing.
Melt the vegan chocolate carefully in a bowl above a pan of simmering water. Drizzle over the bars and decorate as you see fit.
