Oven Baked Oats 2 Ways – recipe

Blueberry and banana and apple and almond baked oats

Now winter is properly here, I decided to try out some baked porridge.  While it takes a bit longer than than normal porridge, it was definitely worth the wait.  The porridge turned out super rich, soft and tasty.  On the left is blueberry and banana flavour and on the right apple and almond.  My personal favourite was the apple and almond.  It was super creamy almost like a dessert.  If you want to make it yourself here’s how . ..

Apple and Almond Baked Porridge (serves 2)

120g oats

450 ml of almond milk

1 apple, peeled and grated coarsely (I used royal gala)

6 dates, roughly chopped

1 tablespoon homemade almond butter

1 tablespoon maple syrup

1 teaspoon cinnamon

Simply cover the oats with the milk and leave to soak for 10 mins.  Then mix in all the other ingredients.  Pour into an oven proof bowl and bake for 15 – 20 mins at 190 degrees.

The banana blueberry used a similar method.  I just replaced the apple and dates with a chopped banana, a generous handful of Finnish blueberries and a few chopped walnuts.
